You Are What You Eat

It’s an old saying but it really is true. What you eat daily says a lot about your future health. Here’s a few things you might want to know about some very special foods. Consider working these into your diet. They can be a part of tasty meals that can really look good and, at the same time, be very good for you.

Eggs, legumes, avocados, and nuts all contain biotin. Biotin is a water-soluble B-complex vitamin (vitamin B7) and is a coenzyme in the metabolism of fatty acids and leucine. It also plays a role in gluconeogenesis, an important process that results in the generation of glucose from non-carbohydrate carbon substrates such as lactate, glycerol, and glucogenic amino acids.

Salmon contains astaxanthin-a carotenoid that improves elasticity. Astaxanthin is a potent antioxidant that may also stimulate the development and maintenance of healthy nervous systems.

Green tea polyphenols have free radicals that protect your skin. Tannin-rich (about 50% of the dry weight) leaves are the primary source of these important phytochemicals.

The potassium ion is necessary for the proper function of all living cells, and is thus present in all plant and animal tissues. It is found in especially high concentrations within plant cells, and in a mixed diet, it is most highly concentrated in fruits and some green vegetables. To get extra potassium you can have swiss chard (960mg), spinach (838mg), cantaloupe (494mg), peas (709mg), beans (713mg), figs (526mg), lentils (730mg), avocado (874mg), yogurt (572mg), papaya (781mg), or the world famous potassium banana (467mg).
